Eating nutritious, balanced meals is a key part of the healing that takes place within your body, and the Well of Life Center has always made it a priority to help you expand and improve your healthy cooking skills and techniques. Our goal is to make it as easy and enjoyable as possible for you as you work to keep yourself and your family healthy.

Apple Nut Muffins

Walnut Basil Spread

INGREDIENTS:
1 ¾ cup sprouted or spelt flour⁠
½ cup organic wheat bran⁠
1 tablespoon baking powder (aluminum-free)⁠
½ teaspoon salt⁠
½ cup organic walnuts, chopped⁠
½ cup organic raisins⁠
½ cup organic fresh apple, diced⁠
1 egg⁠
1 cup organic apple juice⁠
1/2 cup water⁠
3 tablespoons warm coconut oil⁠
½ teaspoon cinnamon⁠

DIRECTIONS:

Preheat oven to 400°. Line muffin tin with paper liners.⁠

Mix first 4 dry ingredients. Add walnuts, raisins, and apple. Stir well. Set aside.⁠

Warm 2 tablespoons water and thoroughly mix in with egg. Combine apple juice with 1/2 cup water and 3 tablespoons coconut oil. Add egg mixture to juice mixture and stir well.⁠

Combine dry and wet ingredients, stirring just enough to thoroughly blend batter. Let the mixture sit for 10 minutes. Add more bran if consistency is too thin. Scoop into the lined muffin tin and bake for 18 minutes.⁠

Remove from oven and allow them to sit in tin for a few minutes before removing.⁠

Slice in half and spread with almond butter. Top with applesauce or apple butter.⁠
