Strawberry Romaine Salad
2 Tablespoons agave nectar
1/3 cup sliced almonds
1 head romaine lettuce, washed and torn
1/2 cup green onions, sliced
2 cups fresh strawberries, sliced
Creamy Poppyseed Dressing
1/2 cup safflower mayonnaise
1/4 cup agave nectar
1 Tablespoon plain greek yogurt
2 teaspoons poppy seeds
In a skillet over medium-low heat, cook and stir the agave nectar and almonds until they are light brown. Spread on foil to cool; break into small pieces.
In large bowl, combine the romaine, green onions, and strawberries. Combine the dressing ingredients; drizzle over salad and toss to coat. Sprinkle with candied almonds.
Yields 10 servings.
